Phil provided us with a handout that described in detail his commandments for proper woodturning.  Here's a copy of Phil's commandments...

He demonstrated the proper use of several tools, including the roughing gouge shown here.

Turning involves more than just the tools, you need to know what direction to cut based on how the woodfibers are oriented.  Here Phil shows that it's easier to cut downhill where the fiber you are cutting is supported by the layer underneath.
